hugs and quiches

Quiche
noun
a open-faced baked flan or tart with a savoury filling thickened with eggs

Quiches are my ultimate favourite to-go meals for picnics or pot-luck parties and they are so incredibly easy to make. Quiches, like pizzas, are extremely versatile in the sense that they can be paired with any ingredients. I've previously made a salmon and spinach quiche, as well as an asparagus and bacon combination. Here's my very own recipe (using broccoli and ham, but you can use whatever ingredients you want) for the perfect fool-proof quiche.

makes one quiche filling a 9-inch tart pan
for the crust:
half a block of shortcrust pastry or 250g
for the filling:
a small red onion, chopped
two garlic cloves, chopped
one small broccoli head, chopped evenly
a cup of ham, diced
1/2 cup mozzarella cheese, in fine pieces
1/8 cup parmesan cheese, in fine pieces
(optional: small chunks of cream cheese, these melt in your mouth after you bake them)
for the milk mixture:
2/3 cup of milk
3 eggs
salt and pepper to taste

directions
Preheat your oven to 200 degrees celsius
Roll out your pastry dough on a lightly floured surface before transferring to the oiled pan
Blind bake the crust using baking beads for about 10 minutes
Combine all the ingredients for the milk mixture
Layer your filling on the crust before pouring your milk mixture over
Bake for 45 minutes or until the top is golden brown and a toothpick inserted comes out clean
